These baked apple donuts with a sweet vanilla glaze offer a deliciously moist and flavorful treat perfect for breakfast or dessert. Made with warm spices like cinnamon and nutmeg, tender chunks of apple, and a simple powdered sugar glaze, they are a healthier alternative to fried donuts while still satisfying your sweet tooth.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup finely chopped apples

Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a donut pan to ensure the donuts don't stick while baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined to create your dry mixture.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted unsalted butter until smooth and combined.
  4. Combine Mixtures: Add the wet ingredients to the dry ingredients and gently mix just until combined. Avoid overmixing to keep the donuts tender.
  5. Add Apples: Fold in the finely chopped apples evenly throughout the batter for bursts of fruity flavor.
  6. Fill Donut Pan: Spoon the batter into the greased donut pan, filling each cavity about three-quarters full to allow room for rising.
  7. Bake: Bake in the preheated oven for 12 to 15 minutes, or until the donuts are golden and a toothpick inserted into the center comes out clean.
  8. Prepare Glaze: While the donuts cool, whisk together powdered sugar, milk (start with 2 tablespoons and add more if needed), and vanilla extract until you get a smooth, pourable glaze.
  9. Glaze Donuts: Once the donuts have completely cooled, dip the tops into the glaze and set them on a wire rack to let the glaze harden before serving.

Notes

  • Ensure the donuts are fully cooled before glazing to prevent the glaze from melting too much.
  • For a thicker glaze, use less milk; for a thinner glaze, add a bit more gradually.
  • You can substitute buttermilk with regular milk plus 1 tablespoon of lemon juice or vinegar as a homemade buttermilk alternative.
  • If you don’t have a donut pan, use a muffin pan and reduce baking time slightly, checking for doneness early.
