Ingredients

Cornish Hens and Seasoning

Glaze and Cooking Liquids

  • 3 Tbsp extra virgin olive oil (divide as 1 Tbsp per hen and 1 Tbsp for vegetables)
  • 4 fresh thyme sprigs, plus more thyme leaves for topping
  • 2 cups apple cider
  • 1/2 cup pure maple syrup
  • 2 Tbsp cornstarch or 4 Tbsp flour (for thickening the cider glaze)
  • Additional sea salt and fresh cracked pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) to prepare for roasting the Cornish hens.
  2. Prepare Seasoning Mix: In a small bowl, combine garlic powder, dried thyme leaves, crushed dried rosemary, dried parsley, coarse sea salt, onion powder, garlic salt, and fresh cracked pepper. This blend will season the hens beautifully.
  3. Prep the Cornish Hens: If your hens include giblets, remove and discard them. Pat the hens dry thoroughly with paper towels to ensure crisp skin. Rub the seasoning mixture evenly over each hen. Cover lightly and let them rest for about 10 minutes to absorb the flavors.
  4. Prepare Vegetables: Quarter the yellow Dutch potatoes and yellow onion. Layer them at the bottom of a roasting pan or baking dish, along with two sprigs of fresh thyme. This base not only flavors the hens but prevents sticking.
