Cilantro Lime Sauce

  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1/2 small shallot or red onion, finely chopped
  • 1 tbsp sugar
  • 1 tsp curry powder
  • 1/2 tbsp chili powder (optional for extra spice)
  • 1/4 cup olive oil

Seasonings

  • 1.5 to 2 tbsp vegetarian mushroom oyster sauce, to taste
  • 1 tbsp dark soy sauce
  • 2 tbsp lime juice (juice from 1 lime)

Instructions

  1. Cook the noodles: Prepare your noodles according to package instructions, but slightly undercook them so they remain chewy. Once cooked, rinse the noodles under cold water to stop the cooking process. Drain and set aside. Rinse and dry the pot used for cooking noodles to prepare for the next step.
  2. Prepare the cilantro lime sauce mixture: In a large heat-proof bowl, combine the chopped cilantro, minced garlic, chopped shallot or red onion, curry powder, sugar, and chili powder if using. Mix the dry ingredients well to blend flavors.
  3. Heat the oil: Place the rinsed pot on medium to medium-high heat and add the olive oil. Heat for about 3-4 minutes until hot and small bubbles start to form. To test if the oil is ready, drop a small piece of garlic in the oil; it should sizzle immediately.
  4. Temper the sauce: Turn off the heat and immediately pour the hot oil over the bowl with the cilantro and spices. Enjoy the sizzling sound as the hot oil cooks the aromatics and releases their fragrance. Stir the mixture thoroughly to combine.
