This creamy and flavorful Garlic Bread Dip combines the rich, roasted garlic with a blend of cream cheese, sour cream, and cheeses for a perfect appetizer. Served warm with crostini or crackers, it's ideal for parties or casual snacking.

Ingredients

Roasted Garlic

  • 2 heads garlic
  • 1 teaspoon olive oil

Dip

  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley, as a garnish
  • Crostini or crackers, for serving

Instructions

  1. Roast the Garlic: Preheat your oven to 400℉. Remove the excess papery outer layers from the garlic heads. Slice off about ¼ inch from the top (the root end) to expose the individual cloves. Discard the sliced tops. Create a small foil bowl to hold the garlic heads upright, place them inside, and drizzle with olive oil. Cover completely with foil and roast for 40-50 minutes until the garlic is soft and slightly browned. Remove from the oven and let cool enough to handle.
  2. Prepare the Dip Mixture: Reduce the oven temperature to 350℉. Once the roasted garlic is cool, squeeze the soft cloves out of their skins into a bowl. In a mixing bowl, combine the roasted garlic with room temperature cream cheese, sour cream, mozzarella cheese, half of the grated parmesan, salt, and pepper. Mix thoroughly until smooth and well blended.
  3. Bake the Dip: Transfer the mixture to an oven-safe dish. Sprinkle the remaining parmesan cheese evenly over the top. Bake at 350℉ for 20-25 minutes, or until the dip is bubbly and the top is golden brown.
  4. Garnish and Serve: Remove the dip from the oven and garnish with freshly chopped parsley. Serve warm with crostini or crackers for dipping.

Notes

  • You can prepare the roasted garlic ahead of time and refrigerate it for up to a week, making dip assembly quick and easy.
  • For a spicier kick, add a pinch of red pepper flakes to the dip mixture.
  • If you don’t have mozzarella, Monterey Jack or a mild cheddar can be substituted.
