Honey Feta Sweet Potato Rounds are a delicious and easy-to-make appetizer featuring roasted sweet potato slices topped with tangy feta cheese and drizzled with sweet honey. This dish offers a perfect balance of creamy, sweet, and savory flavors with optional enhancements like fresh thyme, nuts, and balsamic glaze, making it ideal for snacks, parties, or light meals.

Ingredients

Sweet Potato Rounds

  • 2 medium sweet potatoes, peeled and sliced into ½-inch thick rounds
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Toppings

  • 4 ounces feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves, chopped (optional)
  • 1 tablespoon balsamic glaze (optional, for drizzling)
  • ¼ cup chopped walnuts or pecans (optional, for garnish)

Instructions

  1. Prepare the Sweet Potatoes: Peel the sweet potatoes using a vegetable peeler and slice them into uniform ½-inch thick rounds to ensure even cooking.
  2. Season the Rounds: In a large bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until well coated.
  3. Preheat the Oven: Heat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  4. Arrange and Roast: Spread the sweet potato rounds in a single layer on the baking sheet without overlapping. Roast for 20-25 minutes, flipping halfway through, until tender and slightly browned.
  5. Check for Doneness: Pierce the rounds with a fork after 20 minutes; if not tender, continue roasting for an additional 5 minutes.
  6. Cool Slightly: Remove from the oven and let the rounds cool for a few minutes to prevent the feta from melting excessively.
  7. Add Toppings: Sprinkle crumbled feta cheese evenly over the warm sweet potatoes.
  8. Drizzle with Honey: Drizzle honey generously over the feta-topped rounds to add sweetness.
  9. Add Optional Garnishes: If using, top with chopped fresh thyme and nuts for extra flavor and crunch, then drizzle balsamic glaze if desired.
  10. Serve: Serve immediately while warm for the best flavor and texture. Leftovers can be reheated in the oven, microwave, or air fryer.

Notes

  • You may substitute sweet potatoes with white or purple varieties.
  • If feta isn’t preferred, goat cheese, ricotta, or Parmesan can be used instead.
  • Maple syrup or agave nectar are good alternatives to honey.
  • Add a pinch of red pepper flakes before roasting for a spicy kick.
  • Use herbs like rosemary, oregano, or sage if fresh thyme is unavailable.
  • For nut allergies, omit nuts or replace with seeds such as sunflower or pumpkin seeds.
  • To turn this into a full meal, add grilled chicken or shrimp.
  • An air fryer can be used by cooking the rounds at 375°F (190°C) for 10-12 minutes, flipping halfway.
