Ingredients

Eggs and Base

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika (plus extra for garnish)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Cheese and Bacon

  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled

Garnish and Serving

  • 2 green onions, finely chopped
  • Crackers, chips, or toasted bread slices for serving

Instructions

  1. Cook the Eggs: Place the eggs in a saucepan, cover with cold water, and bring to a boil. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10–12 minutes. Drain the hot water, cool the eggs under cold running water, peel them, and chop into small pieces.
  2. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Stir this mixture well until smooth, then fold in the chopped eggs until they are evenly coated.
  3. Add Cheese & Bacon: Mix in the shredded sharp cheddar cheese and half of the crumbled cooked bacon, distributing them throughout the egg mixture.
  4. Bake: Preheat your oven to 350°F (175°C). Grease a baking dish, then spread the egg and cheese mixture evenly inside. Bake uncovered for 15–20 minutes, or until the dip is hot and bubbly.
  5. Garnish & Serve: Remove from the oven and sprinkle the remaining crumbled bacon, finely chopped green onions, and a pinch of paprika on top. Serve the dip warm alongside crackers, chips, or toasted bread slices for dipping.
