This Keto Beef and Cauliflower Casserole is a delicious low-carb, high-fat meal perfect for those following a ketogenic lifestyle. Ground beef is cooked with aromatic onions, garlic, and Italian seasoning, layered with creamy cauliflower puree blended with heavy cream and cheddar cheese, then baked until golden and bubbly. Garnished with fresh parsley, it offers a comforting and satisfying dish that’s easy to prepare and rich in flavor.

Ingredients

Main Ingredients

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups cauliflower florets (fresh or frozen)
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Sauté Aromatics: In a skillet over medium heat, warm the olive oil. Add diced onion and minced garlic, cooking until the onion becomes soft and translucent.
  3. Cook Ground Beef: Add the ground beef to the skillet and cook until browned. Season with Italian seasoning, salt, and pepper to taste, mixing thoroughly.
  4. Prepare Cauliflower Puree: In a separate pot, steam or boil the cauliflower florets until tender. Drain well, then blend the cooked cauliflower with heavy cream and half of the shredded cheddar cheese until smooth and creamy.
  5. Assemble the Casserole: In a baking dish, spread the cooked beef mixture evenly. Top it with the cauliflower puree layer. Sprinkle the remaining shredded cheddar cheese evenly over the top.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes until the cheese on top is bubbly and golden brown.
  7. Garnish and Serve: Remove from the oven, garnish with chopped fresh parsley for freshness and color, and serve warm.

Notes

  • You can use fresh or frozen cauliflower florets depending on availability.
  • For extra cheesiness, feel free to add more cheddar on top before baking.
  • To make this dish dairy-free, substitute heavy cream and cheddar cheese with coconut cream and a dairy-free cheese alternative.
  • Use ground turkey or chicken as a leaner alternative to ground beef if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
