A hearty and flavorful Keto Beef Chili made with ground beef, aromatic spices, and no-sugar-added tomato products, perfect for a low-carb, satisfying meal. This recipe simmers tender beef with chili powder, cumin, smoked paprika, and oregano for a rich, warming dish that can be topped with cheese, sour cream, and jalapeños for added zest.

Ingredients

Meat and Vegetables

  • 2 lbs (900g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Tomato Base

  • 1 can (14 oz) diced tomatoes (no sugar added)
  • 1 can (8 oz) tomato sauce (no sugar added)

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste

Liquids

  • 1 cup beef broth

Optional Toppings

  • Shredded cheese
  • Sour cream
  • Jalapeños

Instructions

  1. Brown the beef: In a large pot or Dutch oven, heat over medium heat and add the ground beef. Cook until browned, breaking it apart with a spoon. Drain any excess fat to reduce greasiness.
  2. Sauté onion and garlic: Add the diced onion and minced garlic to the pot. Cook them along with the beef until the onion becomes soft and translucent, about 3-5 minutes, which will add depth of flavor.
  3. Add tomato and spices: Stir in the diced tomatoes, tomato sauce, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix well to combine all the flavors and spices evenly throughout the chili.
  4. Simmer the chili: Pour in the beef broth and bring the mixture to a gentle simmer over medium heat. Once simmering, reduce the heat to low and let it cook uncovered for about 30 minutes, stirring occasionally to prevent sticking and promote flavor melding.
  5. Serve: When the chili has thickened and flavors are well combined, serve hot. Top with shredded cheese, sour cream, and jalapeños as desired for extra creaminess and heat.

Notes

  • For extra heat, add chopped jalapeños or hot sauce into the chili during cooking.
  • Use no-sugar-added tomato products to keep the recipe keto-friendly.
  • To reduce cooking time, use a pressure cooker or instant pot set to chili mode if available.
  • This chili stores well and tastes even better the next day as flavors meld.
  • For a dairy-free option, omit cheese and sour cream or use dairy-free alternatives.
