This Keto Beef Pepper Steak is a quick and flavorful low-carb dinner option featuring tender sirloin steak, colorful bell peppers, and onions all cooked in a savory soy-ginger sauce. Perfect for keto and gluten-free diets, this stir-fry style dish comes together in under 30 minutes and is garnished with fresh green onions for an extra burst of flavor.

Ingredients

Beef and Marinade

  • 1 lb (450g) sirloin steak, sliced thinly
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon erythritol or another keto-friendly sweetener
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Vegetables

  • 1 bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Cooking Fat and Garnish

  • 2 tablespoons coconut oil (or olive oil)
  • Green onions, sliced (for garnish)

Instructions

  1. Brown the Beef: Heat the coconut oil in a large skillet over medium-high heat. Add the thinly sliced sirloin steak and cook for 3-5 minutes until nicely browned on all sides. Remove the beef from the skillet and set aside to rest.
  2. Sauté Vegetables: In the same skillet, add the sliced bell pepper, onion, and minced garlic. Sauté for about 4-5 minutes until the vegetables are tender but still crisp, stirring occasionally to prevent burning.
  3. Combine and Simmer: Return the browned beef to the skillet with the sautéed vegetables. Stir in the soy sauce or tamari, erythritol, minced ginger, salt, and pepper. Cook everything together for an additional 2-3 minutes, allowing the flavors to meld and the sauce to heat through evenly.
  4. Serve and Garnish: Remove from heat and transfer to serving plates. Garnish with freshly sliced green onions for a fresh and vibrant finish. Serve immediately while hot.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • Adjust sweetness by varying the amount of erythritol or substituting with another keto-approved sweetener.
  • Sirloin works well for this recipe, but you can substitute with flank or ribeye steak slices if preferred.
  • Make sure to slice the steak thinly against the grain for tender bites.
  • This recipe can be doubled easily to serve more people.
