This Keto Cheesy Bacon Brussels Sprouts Casserole is a delicious low-carb side dish perfect for keto diets. Roasted Brussels sprouts are combined with a rich cheese sauce and crispy bacon, then baked until bubbly and golden, creating a comforting and flavorful casserole that’s perfect for any meal.

Ingredients

Vegetables

  • 4 cups Brussels sprouts, halved

Meat

  • 6 slices bacon, cooked and crumbled

Dairy

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened

Spices & Oils

  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for roasting the Brussels sprouts and baking the casserole.
  2. Roast Brussels Sprouts: In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper ensuring even coating. Spread them out on a baking sheet in a single layer and roast for about 20 minutes until tender and slightly caramelized.
  3. Make Cheese Sauce: While the Brussels sprouts roast, combine the heavy cream, softened cream cheese, garlic powder, and half of the shredded cheddar cheese in a mixing bowl. Mix until the sauce is smooth and creamy.
  4. Assemble Casserole: Grease a 9×9-inch baking dish. Layer the roasted Brussels sprouts evenly in the dish, then sprinkle the crumbled cooked bacon over them. Pour the prepared cheese sauce over the top, spreading it evenly. Finally, sprinkle the remaining cheddar cheese on top.
  5. Bake Casserole: Place the baking dish in the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown on top. Remove from oven and allow to cool slightly before serving for the best texture and flavor.

Notes

  • You can substitute bacon with turkey bacon for a leaner option.
  • For extra flavor, add chopped onions or a sprinkle of smoked paprika to the cheese sauce.
  • Ensure Brussels sprouts are cut evenly for uniform roasting.
  • Use full-fat dairy products to keep it keto-friendly and creamy.
  • This casserole can be prepared ahead of time and refrigerated before baking.
