This Keto Cheesy Zucchini and Ground Beef Casserole is a delicious low-carb meal that combines savory ground beef with tender zucchini and a rich, cheesy topping. Perfect for those following a keto lifestyle, it's easy to prepare and bakes to a bubbly, golden perfection.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 4 cups zucchini, sliced
  • 1 cup diced tomatoes (canned or fresh)

Cheese and Seasonings

  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking the casserole.
  2. Cook Ground Beef: In a skillet, heat olive oil over medium heat. Add the ground beef and cook it until browned, breaking it apart as it cooks. Once browned, drain excess fat to keep the dish leaner and reduce greasiness.
  3. Add Vegetables and Seasonings: Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper into the skillet with beef. Cook until the zucchini softens but still retains some texture, about 5 to 7 minutes.
  4. Prepare Cheese Mixture: In a mixing bowl, combine the softened cream cheese with half of the shredded cheddar cheese. Mix thoroughly until smooth and creamy, ensuring an even cheese layer in the casserole.
  5. Assemble Casserole: Grease a 9×13-inch baking dish lightly with olive oil or nonstick spray. Layer in the beef and zucchini mixture evenly, then spread the cream cheese mixture over the top. Finally, sprinkle the remaining shredded cheddar cheese over the cream cheese layer for a cheesy crust.
  6. Bake: Place the assembled casserole into the preheated oven and bake for 25 to 30 minutes. Bake until the cheese on top is melted, bubbly, and starting to turn golden brown.
  7. Cool and Serve: Remove the casserole from the oven and let it cool slightly before serving to allow the layers to set for easier slicing.

Notes

  • You can substitute the ground beef with ground turkey or chicken for a leaner option.
  • For extra flavor, add minced garlic or onion while cooking the beef.
  • If using fresh tomatoes, be sure to drain excess juice to prevent the casserole from becoming watery.
  • This casserole can be prepared a day in advance and baked just before serving.
  • Leftovers store well covered in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
