A creamy, low-carb Keto Garlic Mushroom Chicken Casserole that combines tender cooked chicken, sautéed mushrooms, and a rich garlic cream sauce topped with melted mozzarella cheese. Perfect for a comforting, satisfying ketogenic meal.

Ingredients

Chicken

  • 2 cups cooked chicken, shredded or diced

Mushroom and Garlic Mixture

  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • Olive oil for cooking (about 1 tablespoon)

Cream Sauce

  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 teaspoon thyme
  • Salt and pepper to taste

Topping

  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Garlic and Mushrooms: Heat olive oil in a skillet over medium heat. Add minced garlic and sliced mushrooms, sautéing until mushrooms are tender, about 5-7 minutes.
  3. Make Cream Sauce: In a mixing bowl, combine heavy cream, softened cream cheese, thyme, salt, and pepper. Whisk until the mixture is smooth and well blended.
  4. Combine Ingredients: Stir the cooked chicken into the sautéed mushroom and garlic mixture. Pour the cream sauce over the chicken and mushrooms, mixing well to evenly coat all ingredients.
  5. Assemble Casserole: Transfer the mixture to a greased 9×9-inch baking dish. Evenly sprinkle the shredded mozzarella cheese over the top.
  6. Bake: Bake in the preheated oven for 25-30 minutes or until the cheese is melted, bubbly, and golden on top.
  7. Cool and Serve: Allow the casserole to cool slightly before serving to let it set and enhance flavors.
