This Spinach-Artichoke Flatbread is a quick and delicious appetizer or snack featuring a creamy blend of spinach, artichokes, and cheeses spread over crispy flatbread or pizza dough. Perfectly baked to golden edges and bubbly cheese, it's a flavorful way to enjoy a classic dip in flatbread form.

Ingredients

Flatbread Base

  • 1 store-bought flatbread or pizza dough

Spinach-Artichoke Topping

  • 1 cup frozen spinach, thawed and drained
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleaning easier.
  2. Prepare the topping mixture: In a mixing bowl, combine the thawed and drained spinach, chopped artichoke hearts, softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, minced garlic, lemon juice, and season with salt and pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Assemble the flatbread: Place the store-bought flatbread or rolled-out pizza dough onto the prepared baking sheet. Evenly spread the spinach-artichoke mixture over the surface of the flatbread, covering it completely for maximum flavor.
  4. Bake: Put the baking sheet in the preheated oven and bake for 15-20 minutes. Bake until the edges of the flatbread turn golden brown and the cheese topping is melted and bubbly.
  5. Serve: Remove the flatbread from the oven, slice into pieces, and serve warm to enjoy the creamy, savory flavors at their best.

Notes

  • Make sure to thoroughly drain the spinach and artichokes to avoid a soggy flatbread.
  • You can substitute cream cheese with Neufchatel for a lower-fat option.
  • For added flavor, sprinkle red pepper flakes or fresh herbs like basil or parsley on top before serving.
  • This flatbread can also be made on pizza dough for a thicker crust variation.
  • Store any leftovers in an airtight container and reheat in the oven for best texture.
