These Cucumber Cottage Cheese Wraps are a light, crisp, and customizable snack or light meal perfect for a quick, healthy option. Featuring creamy cottage cheese blended with fresh herbs and lemon juice, layered on soft flour or spinach wraps and filled with crunchy cucumber and optional colorful bell peppers, these wraps offer a refreshing balance of flavors and textures. They are easy to make, versatile, and ideal for on-the-go lunches or nutritious snacks.

Ingredients

For the Wraps

  • 2 wraps (Flour or Spinach Wraps - try whole wheat or low-carb variants)
  • 1 cup Cottage Cheese (substitute with ricotta or Greek yogurt)

For the Filling

  • 1 medium Cucumber (sliced or julienned)
  • ¼ cup Red Bell Pepper (finely chopped, optional)
  • ¼ cup Fresh Dill or Parsley (chopped; swap for basil or cilantro)
  • Salt and Pepper (to taste)
  • 1 tablespoon Lemon Juice (or white vinegar; apple cider vinegar works too)
  • ½ teaspoon Garlic Powder (or 1 small clove minced, optional)

Instructions

  1. Prepare the cottage cheese mixture: In a medium bowl, combine the cottage cheese with chopped dill or parsley, lemon juice, garlic powder if using, and salt and pepper. Mix thoroughly until the ingredients are well blended into a creamy, flavorful spread.
  2. Lay out the wraps: Place the flour or spinach wraps flat on a clean surface to prepare for layering.
  3. Spread the mixture: Evenly spread a generous layer of the cottage cheese mixture across each wrap, covering the surface but leaving a little space near the edges for rolling.
  4. Add the fillings: Arrange the sliced or julienned cucumber along the center of each wrap. If desired, add the finely chopped red bell pepper or any other optional veggies on top of the cucumber for extra crunch and color.
  5. Roll the wraps: Starting from the edge closest to you, tightly roll each wrap, folding in the sides as you go to create a secure cylinder that holds the filling in place.
  6. Slice and serve: Slice each wrap diagonally in half for easier handling and presentation. Enjoy them immediately for the best texture or store in the refrigerator for up to 24 hours to keep fresh.

Notes

  • Use whole wheat or low-carb wraps for a healthier or diet-specific option.
  • Try substituting cottage cheese with ricotta or Greek yogurt for different textures and flavors.
  • Fresh herbs like basil or cilantro can replace dill or parsley for flavor variation.
  • Adding garlic powder is optional; fresh minced garlic can be used for a stronger garlic flavor.
  • Store wraps wrapped tightly in plastic wrap or an airtight container to maintain freshness.
  • These wraps are best eaten within 24 hours to keep the vegetable fillings crisp.
