Ingredients

Quinoa

  • 1 teaspoon dried thyme

Salad Finishing

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) to prepare for roasting the vegetables.
  2. Roast vegetables: Toss the chopped bell peppers, zucchini, carrots, and red onion with olive oil, dried thyme, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, until the vegetables are tender and slightly caramelized.
