Smashed Carrots are a delicious and easy side dish featuring tender boiled carrots that are gently smashed, seasoned with garlic and smoked paprika, topped with Parmesan cheese, and roasted to crispy golden perfection. Garnished with fresh parsley, this recipe offers a flavorful and healthy vegetable option for any meal.

Ingredients

Vegetables

  • 1 lb carrots, peeled and cut into thick rounds

Seasonings & Oils

  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Dairy

  • 2 tbsp grated Parmesan cheese

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
  2. Boil Carrots: Place the peeled and thickly sliced carrot rounds into boiling salted water. Cook for 10–12 minutes until the carrots are fork-tender but still hold their shape. Drain the water and allow the carrots to cool slightly.
  3. Smashed Carrots: Arrange the cooked carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press down on each carrot round to smash it slightly, increasing its surface area for roasting.
  4. Season & Add Cheese: Drizzle the smashed carrots evenly with olive oil. Sprinkle them with garlic powder, smoked paprika, salt, and black pepper to taste. Then, evenly distribute the grated Parmesan cheese over the top of the carrots.
  5. Roast: Roast the carrots in the preheated oven for 20–25 minutes. Flip the carrots halfway through cooking to ensure they become crisp and golden brown on both sides.
  6. Garnish & Serve: Once roasted to crispy perfection, remove the carrots from the oven. Garnish with freshly chopped parsley and serve immediately while hot for the best texture and flavor.

Notes

  • Boiling the carrots until just tender ensures they cook through during roasting without drying out.
  • Use a flat-bottomed glass or cup to evenly smash the carrots for maximum caramelization.
  • Feel free to experiment with seasoning by adding herbs like thyme or rosemary.
  • For a vegan version, omit the Parmesan or substitute with a vegan cheese alternative.
  • Serve as a side dish for roasted meats, grilled tofu, or as part of a vegetable platter.
