Instructions

  1. Prepare the Raspberry Puree: In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat for about 5 minutes until the berries break down. Strain through a fine sieve to remove seeds and chill the puree before use.
  2. Brew and Chill Your Coffee: Brew 2 shots of espresso or ½ cup of strong coffee using your preferred method (espresso machine, French press, or stovetop moka pot). Allow the coffee to cool completely.
  3. Assemble the Drink: In a tall glass, add 2 tablespoons of raspberry puree followed by 1 tablespoon of vanilla syrup. Fill the glass with ice cubes to chill the mixture.
