This Viral Chocolate Banana Bark is a simple, no-bake frozen treat combining the natural sweetness of ripe bananas with creamy peanut butter and rich dark chocolate. Perfect for a healthy dessert or snack, this recipe layers bananas and peanut butter, freezes them, then coats the bark in melted dark chocolate with an optional sprinkle of flaky sea salt for a delightful balance of flavors and textures.

Ingredients

Banana Bark Ingredients

  • 2 medium semi-ripe bananas
  • ½ cup + 2 tablespoons creamy peanut butter (drippy preferred)
  • 1.5 cups dark chocolate chips
  • 1 teaspoon coconut oil (optional, for smoother chocolate melting)
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Prepare the Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and make transfer easier later.
  2. Slice the Bananas: Peel the bananas and slice them into approximately ⅓-inch thick pieces, ideally on a slight angle to better fit the pieces together in a rectangular shape.
  3. Arrange the Banana Slices: Place the banana slices close together in a rectangular shape on the parchment-lined baking sheet so they hold together once frozen.
  4. Spread Peanut Butter: Evenly cover the banana slices with the creamy peanut butter. If the peanut butter is too thick, microwave it for 10-15 seconds to soften, then spread using a rubber spatula for an even layer over the bananas.
  5. Freeze to Set Peanut Butter: Place the prepared bark in the freezer for 20 minutes to allow the peanut butter to firm up and bind to the bananas.
  6. Melt the Chocolate: After the peanut butter has set, heat the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until mostly melted. Stir thoroughly to fully melt the chocolate without burning.
  7. Coat with Chocolate: Remove the banana and peanut butter bark from the freezer and pour the melted chocolate over it, spreading evenly to cover all surfaces. Optionally, sprinkle flaky sea salt or additional toppings over the chocolate layer for extra flavor.
  8. Freeze to Set Chocolate: Return the bark to the freezer for at least 90 minutes, or up to 2 hours, to allow the chocolate to firm completely.
  9. Serve: Once fully set, remove the bark from the freezer, flip it over, peel off the parchment paper, and break into large pieces. Enjoy immediately as a refreshing, indulgent frozen treat.

Notes

  • Ensure bananas are semi-ripe for optimal sweetness and firmness.
  • Use creamy, drippy peanut butter for easier spreading; warming slightly helps if it's too thick.
  • Be cautious while melting chocolate to avoid burning—stir often during microwave heating.
  • Flaky sea salt adds a delightful contrast to the sweetness but can be omitted.
  • Store any leftover bark in the freezer to keep it firm and fresh.
  • Additional toppings like chopped nuts or coconut flakes can be added on top of the chocolate before freezing for extra texture.
