A delightful baked Brie recipe featuring a wheel of creamy Brie cheese infused with thinly sliced garlic, drizzled with sweet honey and olive oil, and optionally topped with fresh rosemary. This warm, gooey appetizer is perfect served with sliced baguette or crackers, offering a harmonious blend of savory and sweet flavors.

Ingredients

Cheese and Flavorings

  • 1 wheel of Brie cheese (8 ounces)
  • 3-4 cloves of garlic, thinly sliced
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Fresh rosemary sprigs (optional)

Serving

  • Sliced baguette or crackers, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the Brie.
  2. Prepare Brie: Place the Brie wheel on a baking sheet lined with parchment paper or in a Brie baker if available.
  3. Insert Garlic: Use a small knife to make small slits on top of the Brie. Insert the thinly sliced garlic evenly into these slits across the cheese surface.
  4. Add Honey: Drizzle the honey over the top of the Brie, allowing it to seep into the garlic slits and around the cheese for a sweet flavor.
  5. Drizzle Olive Oil: Drizzle the olive oil evenly over the Brie to enhance flavor and assist in the baking process.
  6. Add Rosemary: If desired, place a few fresh rosemary sprigs on top of the Brie for an aromatic, herbal note.
  7. Bake Brie: Transfer the baking sheet or Brie baker to the oven and bake for 15-20 minutes, or until the Brie is soft and gooey in the center but retains its shape without melting completely.
  8. Cool Slightly: Carefully remove the Brie from the oven and let it cool slightly to set before serving.
  9. Serve: Serve the warm baked Brie with sliced baguette or crackers. Guests can scoop out the gooey cheese and enjoy the harmonious taste of garlic and honey.

Notes

  • Be sure to monitor the Brie closely while baking to prevent it from melting completely and losing its shape.
  • Fresh rosemary adds a lovely aroma but can be omitted if unavailable or not preferred.
  • Use a Brie baker if you have one to keep the cheese contained, otherwise baking on parchment paper works well.
  • For a slightly different flavor, try using flavored honey such as lavender or orange blossom.
  • This recipe is best served warm for optimal gooey texture and flavor.
