A quick and delicious recipe for Cheese Quesadillas featuring melted cheddar and Monterey Jack cheese between warm, crispy flour tortillas, optionally filled with sautéed bell peppers and mushrooms, perfect as a snack or light meal.

Ingredients

Main Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup sliced mushrooms (optional)
  • Salsa and sour cream for serving

Instructions

  1. Heat the skillet: Preheat a skillet or frying pan over medium heat until hot.
  2. Assemble the quesadilla: Place one flour tortilla flat in the skillet and evenly sprinkle half of the shredded cheese over the surface.
  3. Add fillings: Distribute the optional diced bell peppers and sliced mushrooms over the cheese, then sprinkle the remaining cheese on top of the fillings.
  4. Top and cook: Place the second tortilla on top, pressing gently to sandwich the ingredients, and cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  5. Flip carefully: Using a large spatula, flip the quesadilla carefully and cook the second side for another 3-4 minutes until golden brown and cheese is fully melted.
  6. Rest and serve: Remove the quesadilla from the skillet and allow it to rest for a minute before cutting into wedges. Serve warm with salsa and sour cream.

Notes

  • To prevent burning, adjust heat as necessary while cooking.
  • Feel free to customize with other fillings like cooked chicken, jalapeños, or corn.
  • For crispier quesadillas, lightly brush tortillas with oil or butter before cooking.
  • Make sure the cheese is well shredded for even melting.
  • Use a non-stick skillet for easier flipping and cleanup.
