These Christmas Tree Meringues are light, airy, and beautifully festive treats perfect for holiday celebrations. Whipped to glossy peaks and tinted green with gel food coloring, they are piped into charming tree shapes and baked until crisp on the outside. Decorated with sprinkles, they add a delightful sparkle to your dessert table while being naturally gluten-free and low in fat.

Ingredients

Meringue

  • 3 large egg whites (at room temperature)
  • ¾ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Green gel food coloring

Decoration

  • Sprinkles for decoration

Instructions

  1. Preheat Oven: Set your oven to 225°F (110°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Whisk Egg Whites: In a clean bowl, whisk the egg whites on medium speed until they become foamy, which should take about 2 minutes. This helps build the structure of your meringues.
  3. Add Cream of Tartar: Add ¼ teaspoon of cream of tartar and continue whisking until soft peaks form. This stabilizes the egg whites and aids in achieving a fluffy texture.
  4. Add Sugar Gradually: Increase whisk speed to high and add the granulated sugar slowly, one tablespoon at a time. Continue whisking until stiff, glossy peaks form, about 8 to 10 minutes total. This step ensures a smooth, shiny meringue.
  5. Fold in Flavor and Color: Gently fold in 1 teaspoon of vanilla extract and green gel food coloring using a spatula until just combined, taking care not to deflate the meringue.
  6. Pipe Tree Shapes: Transfer the meringue mixture into a piping bag fitted with a large star tip. Pipe tree shapes on the prepared baking sheet by starting with a wide base and spiraling upward in decreasing circles to form a pointed top.
  7. Bake: Bake the meringues for 1 hour and 30 minutes without opening the oven door to allow them to dry out and become crisp.
  8. Cool: Turn off the oven, leave the door slightly open, and allow the meringues to cool completely inside for 30 minutes. This gradual cooling prevents cracking.
  9. Decorate: Once cooled, decorate the meringue trees with sprinkles to add festive charm. Serve and enjoy!

Notes

  • Ensure the mixing bowl and beaters are completely clean and free of grease to achieve proper egg white whisking.
  • Use room temperature egg whites for better volume and stability.
  • Do not open the oven door during baking as this can cause the meringues to crack.
  • Gel food coloring is preferred as it won't affect the meringue’s consistency like liquid food coloring might.
  • Store baked meringues in an airtight container to maintain crispness.
