Ingredients

For the Base

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1 cup buttermilk
  • 2 tsp vanilla extract

For the Cinnamon Filling

  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup unsalted butter (melted)

For the Cream Cheese Frosting

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Base: Preheat your oven to 350°F (175°C). In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Using a pastry cutter or your fingers, cut the cold, cubed unsalted butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the buttermilk and vanilla extract until just combined to form a soft dough.
  2. Mix the Cinnamon Filling: In a small bowl, combine the brown sugar and ground cinnamon. Stir in the melted unsalted butter until the mixture is smooth and evenly blended, creating a sticky cinnamon-sugar filling.
  3. Assemble the Bars: Press about two-thirds of the dough evenly into the bottom of a greased 9x13-inch baking pan to form the base layer. Spread the cinnamon filling evenly over the base. Crumble the remaining dough evenly over the cinnamon layer to create a streusel-like topping.
  4. Bake the Bars: Place the pan in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the base layer comes out clean. Remove from the oven and let the bars cool completely in the pan on a wire rack.
  5. Prepare the Cream Cheese Frosting: In a medium bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy. Gradually add the powdered sugar, mixing well after each addition. Stir in the milk and vanilla extract until the frosting reaches a spreadable consistency.
  6. Frost the Bars: Once the bars are completely cooled, spread the cream cheese frosting evenly over the top. Chill in the refrigerator for about 20 minutes if you prefer a firmer frosting before slicing.
  7. Serve: Cut into bars and serve as a comforting breakfast treat or dessert. Store any leftovers covered in the refrigerator for up to 4 days.

Notes

  • Make sure the butter for the base is cold to achieve a crumbly texture.
  • Allow the bars to cool completely before frosting to prevent melting the frosting.
  • You can substitute buttermilk with milk mixed with 1 tbsp vinegar or lemon juice, left to sit for 5 minutes.
  • For a vegan option, substitute butter and cream cheese with plant-based alternatives and use non-dairy milk.
  • Store bars in the refrigerator to keep the cream cheese frosting fresh.
