Ingredients

Carrots and Seasoning

  • 2 medium carrots (about 1 ½ cups), sliced into 2-3 inch pieces
  • 1 tbsp olive oil
  • ½ tbsp honey

  • ¼ tsp salt
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme

Toast and Toppings

  • 2 slices whole grain bread
  • 1 cup cottage cheese
  • 1 tbsp pumpkin seeds
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Carrots: Heat a frying pan over medium heat and add olive oil. Once the oil is hot, reduce the heat to low. Add the sliced carrots to the pan, then sprinkle in oregano, paprika, and salt. Add fresh rosemary and thyme sprigs. Cook the carrots until tender, adding a tablespoon of water and covering the pan if needed to speed up cooking. Stir in honey and cook for another minute to coat the carrots evenly. Remove from heat and set aside.
  2. Toast the Pumpkin Seeds: In the same pan, add pumpkin seeds. Cook over low heat, stirring occasionally, until the seeds start to pop and turn golden brown. Remove from heat and set aside.
  3. Toast the Bread: Place the whole grain bread slices in the same pan and toast on both sides over medium heat until golden and crispy.
  4. Assemble the Toast: Spread a generous layer of cottage cheese over each slice of toasted bread. Top with the warm honey-glazed carrots. Sprinkle toasted pumpkin seeds and chopped fresh parsley over the top. Optionally drizzle with extra honey. Serve immediately.
