  • Green onions, sliced (for garnish)

  • 2 eggs, beaten
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook the ground beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks. Once browned, drain any excess fat and set the beef aside.
  2. Sauté onion and garlic: Using the same skillet, add the diced onion and minced garlic. Cook, stirring occasionally, until the onion is softened and translucent, which usually takes about 3-4 minutes.
  3. Scramble the eggs: Push the cooked onion and garlic to one side of the skillet. Pour the beaten eggs into the cleared side and scramble them gently until fully cooked, about 2-3 minutes.
  4. Add cauliflower rice and vegetables: Stir in the cauliflower rice and frozen peas and carrots if using. Mix everything together and cook for approximately 5 minutes until the cauliflower rice is heated through and slightly tender.
  5. Combine all ingredients: Return the cooked ground beef to the skillet. Add soy sauce, sesame oil, salt, and pepper to taste. Stir well to evenly coat and combine all ingredients. Cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Serve: Remove from heat and serve the fried rice hot, garnished with sliced green onions for a fresh, flavorful finish.
