This hearty Keto Beef Stew is a low-carb, comforting dish perfect for chilly days. Tender beef chuck cubes are seared to lock in flavor, then slow-simmered with cauliflower, green beans, and aromatic herbs in a rich beef broth. This stew offers a satisfying meal that aligns with ketogenic dietary needs without compromising on taste.

Ingredients

Beef and Broth

  • 2 lbs (900g) beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 tablespoons olive oil

Vegetables and Herbs

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups cauliflower florets
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Sear the beef: In a large pot, heat olive oil over medium-high heat. Add the beef cubes and sear them until browned on all sides. This step locks in the flavors and creates a rich base for the stew. Remove the browned beef and set aside.
  2. Sauté aromatics: Using the same pot, add diced onion and minced garlic. Cook over medium heat until the onion becomes translucent and both are softened, releasing their aromatic flavors.
  3. Add beef and liquids: Return the seared beef to the pot. Pour in the beef broth ensuring all ingredients are submerged. This will create the stew’s rich cooking liquid.
  4. Add vegetables and seasoning: Stir in the cauliflower florets, green beans, dried thyme, rosemary, salt, and pepper. These elements build depth of flavor and add texture to the stew.
  5. Simmer the stew: Bring the mixture to a gentle simmer. Cover the pot and reduce heat to low. Let it cook for approximately 1.5 to 2 hours, until the beef is tender and the flavors have melded beautifully.
  6. Serve: Serve the stew hot, optionally garnished with fresh herbs of your choice for added freshness and presentation.

Notes

  • For even more flavor, marinate the beef cubes in olive oil, garlic, and herbs for an hour before cooking.
  • If thicker stew is desired, remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • Vegetables can be adjusted based on preference; mushrooms or zucchini can be added while maintaining the keto profile.
  • Use homemade or low-sodium beef broth to control salt levels.
  • Leftovers store well in the refrigerator for up to 3 days and also freeze well for meal prep.
