A flavorful and easy one-pot meal featuring garlic butter shrimp cooked with tender rice and sweet peas, perfect for a quick weeknight dinner.

Ingredients

Shrimp and Seasoning

  • 1 pound shrimp, peeled and deveined
  • Salt and pepper, to taste

Rice and Vegetables

  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 cup frozen peas

Flavorings and Garnish

  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the shrimp: Heat olive oil in a large pot over medium heat. Season the peeled and deveined shrimp with salt and pepper, then add them to the pot. Cook for 2 to 3 minutes until the shrimp turn pink and are cooked through. Remove the shrimp from the pot and set aside to keep warm.
  2. Sauté the garlic: In the same pot, add the minced garlic and cook for about 1 minute, stirring frequently, until fragrant but not browned. This will infuse the oil with a rich garlic flavor that will be absorbed by the rice.
  3. Cook the rice: Stir in the long-grain rice to coat it in the garlic oil. Then pour in the chicken or vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 15 minutes, or until the rice is tender and has absorbed the liquid.
  4. Add peas and combine shrimp: Stir in the frozen peas and return the cooked shrimp to the pot along with 1 tablespoon of butter and the juice of one lemon. Mix gently until the butter melts completely and all ingredients are well combined, imparting a bright and savory finish to the dish.
  5. Finish and serve: Fluff the rice gently with a fork to separate the grains, then garnish with freshly chopped parsley. Serve the garlic butter shrimp and rice warm as a satisfying, flavorful one-pot meal.

Notes

  • Make sure not to overcook the shrimp to keep them tender and juicy.
  • If you prefer, you can substitute frozen peas with fresh peas when in season for sweeter flavor.
  • Use low-sodium broth to control the saltiness of the dish.
  • Adding a pinch of red pepper flakes during the garlic sauté step can add a subtle kick.
  • This recipe can be doubled easily for larger servings.
