This Roasted Tomato Burrata Bruschetta is a delightful appetizer combining sweet, bursting cherry tomatoes roasted to perfection, creamy burrata cheese, and fresh basil. Enhanced with a hint of garlic and shallots, drizzled with olive oil and balsamic glaze, it's perfect served on toasted baguette slices or crackers for a sophisticated starter or light snack.

Ingredients

Main Ingredients

  • 1 pint cherry tomatoes
  • 4 oz burrata cheese ball
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, chopped

For Serving

  • 1 baguette, sliced (optional)
  • 1 tbsp balsamic glaze

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for roasting the cherry tomatoes.
  2. Prepare the tomato mixture: In a baking dish, combine the cherry tomatoes, finely chopped shallot, minced garlic, and olive oil. Toss everything together to coat the tomatoes evenly with the oil and seasonings.
  3. Roast the tomatoes: Place the baking dish in the oven and roast the tomatoes for 20-25 minutes until they start to burst and release their juices. Then increase the oven temperature to high and roast for an additional 2-3 minutes to achieve a nicely browned top layer.
  4. Cool the tomatoes: Remove the tomatoes from the oven and allow them to cool for about 5 minutes, which also allows the flavors to meld.
  5. Season and assemble: Sprinkle chopped fresh basil over the roasted tomatoes, season with salt and pepper to taste, then place the burrata cheese ball on top of the tomato mixture.
  6. Serve: Drizzle balsamic glaze over the assembled bruschetta. Serve the mixture with toasted baguette slices, crostinis, or crackers for a delicious appetizer or light meal.

Notes

  • Toasting the baguette slices before serving enhances the texture and flavor of the bruschetta.
  • Use ripe cherry tomatoes for the best sweetness and bursting effect.
  • Burrata should be served at room temperature for creamier texture and flavor.
  • Balsamic glaze adds a sweet tangy finish but can be omitted or substituted with balsamic vinegar if preferred.
  • For a dairy-free version, substitute burrata with a vegan cheese alternative.
