Instructions

  2. Prepare ice bath. While the eggs cook, fill a large mixing bowl with ice water. As soon as the timer goes off, or slightly before for a slightly softer yolk, transfer the eggs quickly to the ice bath. Let them cool for about 5 minutes to stop the cooking process and make peeling easier.
  3. Peel the eggs. When the eggs are cool enough to handle, gently tap the shells against a counter on all sides to crack them, then carefully peel the shells off. Set the peeled eggs aside for now.
  4. Toast bread. Slice your favorite artisan bread into ½-inch thick slices. Toast them to your preferred level of crispness, then place the slices on plates for serving.
  5. Mix the mayo. In a small bowl, combine the mayonnaise with fresh lemon juice until well blended. Spread a thin layer of this lemon-mayo mixture evenly over each toasted bread slice for a refreshing and creamy base.
