A comforting and hearty garlic potato soup perfect for soothing hangovers. This recipe combines roasted and fresh garlic with tender potatoes simmered in vegetable broth, creating a flavorful and creamy soup that warms you up and revitalizes your senses. Garnished with fresh parsley, crunchy croutons, and optional cheese for extra richness.

Ingredients

For the Soup:

  • 1 small onion, diced into 1/2-inch pieces
  • 4 garlic cloves, freshly minced
  • 1 large head roasted garlic (or pre-roasted from the store)
  • 2 tbsp extra virgin olive oil
  • 4 cups vegetable broth
  • 1 tsp salt, divided
  • 1 tbsp fresh chopped parsley
  • 1/4 tsp freshly ground black pepper
  • 4 large potatoes, peeled and cut into 1-inch chunks

For Garnish (Optional):

  • Chopped parsley
  • Croutons
  • Grated cheese

Instructions

  1. Prepare Ingredients and Build the Aromatic Base: Peel and cut the potatoes into 1-inch chunks, dice the onion into 1/2-inch pieces, and mince the fresh garlic cloves. Heat the olive oil in a large pot over medium heat until shimmering. Add the diced onion and cook for about 8 minutes, stirring occasionally, until soft and translucent to bring out its natural sweetness. Add the minced fresh garlic and 1/2 teaspoon salt, stirring constantly for 1 minute until fragrant, taking care not to brown the garlic to avoid bitterness.
  2. Build the Soup Base and Cook Potatoes: Pour in the vegetable broth and bring to a boil over high heat. Add the prepared potato chunks, the remaining 1/2 teaspoon salt, and the chopped fresh parsley. Reduce heat to a simmer and cook until the potatoes are tender, approximately 20-25 minutes.
  3. Add Roasted Garlic and Season: Once the potatoes are tender, squeeze the roasted garlic cloves out of the head into the soup and stir well. Season with freshly ground black pepper and adjust salt to taste. Simmer for an additional 5 minutes to allow flavors to meld.
  4. Blend Soup for Creamy Texture: Using an immersion blender, carefully puree the soup in the pot until smooth and creamy. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the pot. Reheat gently if needed.
  5. Serve with Garnish: Ladle the soup into bowls and garnish with chopped parsley, croutons for crunch, and grated cheese if desired. Serve warm and enjoy the soothing, hearty flavors.

Notes

  • You can use pre-roasted garlic to save time, but roasting fresh garlic at home enhances the flavor.
  • If you prefer a chunkier soup, blend only half the soup before combining back with the remaining mixture.
  • Vegetable broth can be substituted with chicken broth for a non-vegetarian version.
  • This soup freezes well; store leftovers in an airtight container for up to 3 months.
  • Add a splash of cream or milk before blending for an even richer texture.
