These Spinach Garlic Meatballs are a delicious and healthy twist on classic meatballs, combining lean ground beef or turkey with fresh sautéed spinach, garlic, and Italian seasoning. Enhanced with Parmesan and mozzarella cheese, they offer a flavorful and satisfying meal perfect for lunch or dinner.

Ingredients

For the Meatballs

  • 1 lb Ground Beef or Turkey (lean turkey can be substituted)
  • 2 cups Fresh Spinach, sautéed
  • 4 cloves Garlic, minced
  • 1 small Onion, finely chopped (optional)
  • 1 large Egg
  • 1 cup Breadcrumbs (can use oats or almond flour as alternatives)
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes (use chilled to avoid leaks)
  • 1 tbsp Italian Seasoning
  • Salt, to taste
  • Pepper, to taste

Optional Enhancements

  • 1/2 tsp Red Pepper Flakes (for heat)
  • 1 tbsp Chopped Parsley (for freshness)

Instructions

  1. Prepare the Spinach: Heat a pan over medium heat and sauté the fresh spinach until wilted and moisture is reduced, enhancing its flavor and removing excess water. Remove from heat and set aside to cool.
  2. Mix Ingredients: In a large mixing bowl, combine the sautéed spinach, ground beef or turkey, minced garlic, finely chopped onion (if using), egg, breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes if desired. Mix thoroughly to evenly distribute all ingredients.
  3. Form Meatballs: Using your hands, portion the mixture into small balls about 1 to 1.5 inches in diameter. Insert a chilled mozzarella cube into the center of each meatball, then seal and shape the meat around the cheese to enclose it completely.
  4. Cook the Meatballs: Heat a skillet over medium heat with a small amount of oil. Place the meatballs in the skillet, cooking evenly on all sides. Turn them carefully to ensure they brown nicely without breaking apart, cooking for about 10-12 minutes until fully cooked through and the internal temperature reaches 160°F (71°C).
  5. Serve: Remove the meatballs from the heat and garnish with chopped parsley for freshness if desired. Serve hot as an appetizer, main dish with sides, or in your favorite pasta sauce.

Notes

  • Using chilled mozzarella cubes prevents cheese from leaking out during cooking.
  • Sautéing spinach reduces moisture to maintain meatball texture and intensifies flavor.
  • Breadcrumbs can be substituted with oats or almond flour for gluten-free options.
  • If you prefer leaner meatballs, use ground turkey instead of beef.
  • Cook meatballs on medium heat to ensure even cooking and prevent burning.
  • Meatballs pair well with marinara sauce or can be served with pasta, rice, or vegetables.
