Ingredients

Meat and Sausage

  • 1 package frozen mixed vegetables

  • 2 cans peeled and diced tomatoes, drained (14.5 oz each)
  • 2 cans diced tomatoes with green chile pepper, with liquid (14.5 oz each)
  • 2 cans pinto beans, with liquid (15 oz each)

Spices and Seasonings

  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper, to taste
  • Optional: additional seasonings to taste

  • 4 cups water (adjust based on desired consistency)

Instructions

  1. Brown the Meat and Sausage: In a large pot over medium heat, cook the lean ground beef until fully browned, breaking it up as it cooks. Add the sliced kielbasa sausage pieces and cook until they begin to brown and release their smoky flavor.
  2. Sauté Aromatics: Add the minced garlic and chopped onion to the pot with the meat. Sauté until the onions become translucent and softened, about 3-4 minutes.
  3. Add Vegetables: Stir in the peeled and diced baking potatoes, whole kernel corn, and frozen mixed vegetables to the pot, mixing everything thoroughly.
  4. Add Tomatoes and Beans: Pour in the drained diced tomatoes, diced tomatoes with green chile peppers (including liquid), and pinto beans with their liquid. Stir to combine evenly.
  5. Season the Stew: Sprinkle in the ground cumin, chili powder, salt, and pepper. Add any additional seasonings you prefer to customize the flavor to your liking.
  6. Add Water and Simmer: Pour in 4 cups of water and stir well. Bring the stew to a boil, then reduce heat to low and let it simmer uncovered for about 45 minutes to an hour, or until potatoes are tender and the flavors have melded.
