Instructions

  1. Prepare the Feta: Break the block of feta into about 8 pieces and place in a fine mesh strainer. Rinse briefly under cold water to reduce saltiness and then drain well.
  2. Make the Hot Honey: In a small saucepan, combine honey and red pepper flakes. Warm over medium heat until it starts to simmer, then remove from heat and let cool while preparing the dip.
  3. Whip the Feta: Transfer drained feta to a food processor bowl. Add fresh lemon juice and whole milk or Greek yogurt. Process until the mixture resembles ricotta or cottage cheese in texture.
  4. Add Olive Oil: With the processor running, slowly drizzle in olive oil. Scrape down the sides and process again until the dip is smooth and creamy, with a consistency similar to Greek yogurt.
  5. Plate and Garnish: Transfer the whipped feta dip to a serving bowl. Use a spoon to create a swirl on the surface. Drizzle the cooled hot honey over the top, then sprinkle with chopped pistachios.
  6. Serve: Serve immediately alongside toasted baguette slices for dipping.
